Rosemary Goat Cheese Potatoes

5 small red potatoes
3 purple potatoes
2 T. extra virgin olive oil
2 T. Smart Balance Butter (Vegan)

Seasonings:
1 T. rosemary
garlic powder
sea salt
pepper
oregano

Vegan Option:

Omit goat cheese and substitute non-dairy cheese if desired; I think these are great minus any dairy or dairy substitute, personally. Without the dairy or with Rice Vegan cheese I believe this is considered Parve.


Slice or chop potatoes into shape you prefer and season. Spray a Pyrex baking dish with nonstick spray and add potatoes to dish. Top potatoes with Smart Balance and olive oil and bake at 350 degrees for approximately 45-50 minutes (it depends on the size of your potato pieces). Top with cheese and bake another 5 minutes or until cheese melts. This goes great with grass fed ribs.
