1 c. mixed salad greens
1/2 cucumber, sliced into quarters
handful alfalfa sprouts
scallion, chopped
handful pumpkin seeds
handful sliced red onion
Seasonings:
oregano
fresh basil, chopped (optional)
Just toss it all in a bowl and drizzle with some extra virgin olive oil and balsamic vinegar. A great a quick lunch or side dish!
*I used leftover chicken from the Italian Skillet Chicken.
